2 lb ground beef 3 clove garlic, minced 2 onions, white, finely chopped 1 bell pepper, green. diced 2 cup bouillon cubes. chicken 10¾ oz tomato paste 12 oz green olives, pimiento stuffed 4 potatoes. diced …or bite-sized pieces
In a large pot, sauté the garlic and onion until translucent.
Add the ground beef and brown. Drain the excess fat (if desired). Break-up so there are no large chunks.
Add in all the remaining ingredients, EXCLUDING the olives, and simmer until the potatoes are tender, approximately 20 minutes.
Cooking time will vary based on potato size (i.e. larger = longer).
Add in the olives (add olive juice to taste, optional.) Simmer only until the olive are warmed through.
Serve over white rice.
