
Picadillo

Ingredients
- 2 lb ground beef
- 3 clove garlic, minced
- 2 onions, white, finely chopped
- 1 bell pepper, green. diced
- 2 cup bouillon cubes. chicken
- 10¾ oz tomato paste
- 12 oz green olives, pimiento stuffed
- 4 potatoes. diced …or bite-sized pieces
Instructions
- In a large pot, sauté the garlic and onion until translucent.
- Add the ground beef and brown. Drain the excess fat (if desired). Break-up so there are no large chunks.
- Add in all the remaining ingredients, EXCLUDING the olives, and simmer until the potatoes are tender, approximately 20 minutes.
- Add in the olives (add olive juice to taste, optional.) Simmer only until the olive are warmed through.
- Serve over white rice.
Cooking time will vary based on potato size (i.e. larger = longer).
